From what I understand, much of what you touch and feel in the holodeck is actual replicated material, including the water. Coffee mugs, the coffee in the mug, the table and chairs, etc... are actual "real" things while the program is running, not just forcefields and holograms. I don't remember where I got this information from, but it makes sense, in the Trek universe anyway! That's why people leave the holodeck wet after falling in a river or stream (or any other body of water for that matter!)

MrQ1701, I read the same thing in my Star Trek: Then Next Generation Technical Manual. I used to read that thing thinking I'd figure out warp drive...

I agree the ST-TNG tech manual says some things are replicated, like the water, the coffee, and thus are not holographic.

I guess that a chair does not have to be replicated, force fields should suffice. Replication might come in handy if you want that something smells, e.g. grass or so. But then again you can simply replicate the odour and spray it around like in some theme park rides.
Talking about smell, Quark's holobrothels seem to have serious limitations. And who cleans up your ... remains when you are done? Seems as if Rom's holosuite maintenance job has some downsides.

I think you would have hologram cleaners. If you can have a hologram doctor, anything is possible.

I'm gonna guess the transporters in the holdecks take care of that...
