The 60s show had the low budget flat panel walls, etc. By the time Enterprise was shooting, they could do more (obviously) with CGI and the like. I'd think with it being on the big screen it'll have to have more detail than a 42 year old format.

But the smooth walls are an indication of the higher level of technology. Want something? Just wave your hand over a wall and an opening appears and the stuff inside becomes available. With that level of technology, there's no need for all kinds of extraneous detail.
