Seeing the quarters of Kirk, Spock, and McCoy would be intersting. In Prime Spock's quarters are dark with a firepot (or, that's what it looked like to me) and odd statuary- just wondering if Spock had the same taste in decor.

And, I'd like to see more of sickbay.

I would like to have seen engineering and not the waste water treatment/ swimming pool filtration department. :-) I know, dead horse.

That's a 'grain of salt' thing for me. A futuristic propulsion system just like a modern one will run coolant, they just let you see what was going on for the sake of entertainment and by freeing Scotty and alerting security they were quickly ushered to the bridge thus(<-woo old English word) freeing up time to get on with things.
