Because simply calling it Star Trek could get confusing when Star Trek as a whole is call Star Trek. Like so:

Person one: The Federation in TNG blah blah blah...
Person two: Why, yes! I do remember that!

versus

Person one: The Federation in Star Trek blah blah blah...
Person two: Which Star Trek? Star Trek as a whole or TOS, TNG, DS9, VOY, ENT? TWOK, TMP, TVH, TFF, TUC, Nemisis, etc.?


And if you abbreviate it ST, that doesn't work either because a lot of people abbreviate Star Trek in general with ST.

Well, a new fan will probably only recognize the name Star Trek and know it's in refrerence to the new movie if asked because they won't have a clue of what every series or episode was called. Now if you're talking to a fan and ask them if they've seen Star Trek why would you not specify which one instead of leaving them guessing which one of the hundreds you actually mean? If asked if they've seen the movie Star Trek I'm pretty sure onlly thing comes to mind, the new movie simply called Star Trek.
