Not quite. I seem to remember the line (approximately). "An ancestor of mine once said that when you elminate the impossible, whatever reamins, however improbable, nust be the truth."

Soemone in his family could have read a Holmes novel, or seen a Holmes film and liked and started using that line.

To say something and to quote something are very different things.
Spock would be precise enough to distinguish here.

Anything is possible, and I grant that it is possbile for Doyle to be Grayson ancestor. But we all pick up things growing up that others say/do, so if one of Spock's ancestors/relatives said this alot...you know...

Oh that would be totally funny, especially if the right actress is cast to play a b*tchy ex as an emotional counter. Oh and you have to add the often spoke-of history of Bones liking the ladies. And maybe the ex goes after Kirk to get under Bones skin.
