I know that Kirk,Spock and co never met the Borg, but that would be interesting. Did Kirk's Enterprise go outside the Alpha Quadrant? I don't think it did, at least to explore.

Depends on if you count the galactic rim as outside of alpha quadrant

Also, per this map, the Romalun Star Empire is in the Beta Quadrant, and they entered Romulan space in The Enterprise Incident.

A mirror universe would be cool, but instead of just the characters trading universes, I think the crew AND the enterprise should enter the mirror universe, would be cool the see the crew and the U.S.S. Enterprise battle the crew and the I.S.S. Enterprise in an epic space battle of like minded wits! Could be fun to see who wins in a battle equally balanced. (even though we know the writers would make the U.S.S. win).

That would be a sweet idea, with one twist. After the battle, we found out one of the main crew is their mirror universe counterpart.

How about this: A rift suddenly appears in the Alpha Quadrant and the E is sent to investigate. When they arrive they find another Federation starship which has been partially destroyed. On further investigation they find that this ship does not belong to the Federation but from a parallel universe. The crew are dead. During their investigation several more ships arrive through the rift and confront Kirk and the crew. A standoff ensues until another rift appears and a Borg cube drops out. The Borg attack the small Flotilla of ships before retreating through the rift. With several of the "other Federation" ships destroyed Kirk beams the survivors aboard and heads into the rift after the Borg vessel, his aim, to return the survivors and eliminate the Borg threat to their universe. Spock in the meantime discovers that the rifts are the work of the Borg and that they have to be stopped before the rifts tear apart the quadrant.

I for one would like to see the Gorn on the big screen, the Mugatu as well. Sure the Mugatu were a little odd looking on TOS but think of the possibilities of what a movie creature that could be! We'd probably end up with a makeshift Wampa, but still would be nice to see some of these aliens on the big screen, especially since Trek is back in the 23rd century now.
