I suspect that the Enterprise is already built and in orbit and we won't see the ship that is being constructed go into space at all.

When we see the NX-02 Columbia being built in the orbital drydock, the name was already on her primary hull. So there is a canon precedent.

I think that in the movies, different types of ships worked very well, e.g. the Reliant as "minime" Enterprise or the Excelsior as fancy new ship and another Constitution class vessel would be kinda like a second main 'ship character'.
