Different events are shaping the lives of the characters who bear the names of those were know in the "real" timeline. Some events we know would be in their future will never happen because of alterations.

Both timelines are 'real' and it's likely that even with the changes, they still shape Kirk into a man with the same characteristics and traits.

Put it this way: why would so many characters battle the effects of Nero's interference, only to let all his changes play out unchallenged in the end? This "everything we know is gone" assumption basically implies that Spock, Kirk et al fail entirely at defeating Nero's attack on history, and they will let his plans affect their future unabated.

Do you really think Nero wins in this film?
