What if its this... Nero goes back in times.. destroys the Kelvin which has TOS settings, disappears for years... Starfleet then takes a different turn as they may have based the interior of the Enterprise with Kelvin, but now the Kelvin is gone, they decied of a new design, help see better. Thus causing bright clean white...

Either that or McCoy gets his way and everything is germ free....
