Well Kirk did several novels in "the Return" series. He buys a de-milled excslsior class ship, and puts in disruptors, then tools around the galaxy looking for trouble.

Yes it was the decomissined Enterprise-A...In to book they mentioned that the NCC-1701-A had been heat blasted off leaving only the name of the ship left.
