Well I hate to point out the obvious but what if Pine is simply playing Kirk from around the 18 - 30ish range. He could be playing 19 in the shipyard scene, then 30 in the later stages. It's done all the time on TV, it's done on film all the time.

Could be, if I recall he looks rather spotty in the Motor bike ship yard scene - you know like a teenager.

I took a little look at that, it's not chronologically impossible if the film is set in the right year - around 2265. Although Uhura would need to be aged a little more than we thought, in order for her to be at the bar, but since her definitive birth details were never put onscreen, making her older isn't a strict canon violation

The other thing is, just because they happened to be in training together doesn't mean they got transferred to different ships after this movie takes place. After Star Trek XI, who's not to say that Chek and Uhurah get assignments elsewhere. You see? We can use the "Klingon forehead explanation" approach here too.
