Archer says in one episode he always had dogs around him in his life, so when Porthos dies he will probably get another dog, perhaps after some time of grieving.
These are the kind of small references which are fun and I guess something like the blond lab technician might be refered to as well.
Little harder to push in references to TNG or post-TNG Trek, but can be done as well.

I think including any reference to Archer like this is a mistake. How long is Scotty supposed to be "exiled" anyway?

As much as I hate to start another canon spitstorm, there are inconsistencies. From Memory Alpha:

For the biographical display seen in "In a Mirror, Darkly, Part II", writer Mike Sussman wrote a final section of text that didn't end up being visible on screen, stating that Archer "...died at his home in upstate New York in the year 2245, exactly one day after attending the christening ceremony of the first Federation starship Enterprise, NCC-1701". Note that Sussman himself has said this information might not be canon.

If it is canon, the wisdom of including of Archer is questionable at best. If it isn't canon, it's still a reference to a failed series. It would be best forgotten in this context.

That said, the article I read only referred to "the Admiral's dog," not "Archer's beagle."

Well I don't know exactly what the quote will be in the movie but that "failed series" is cannon and the quote you posted may not be because it was not seen on screen so I don't really see any canon argument here.

In the third scene, the "frozen planet" one, Abrams introduces it by saying, "So, Kirk pisses off Spock and gets marooned. He lands on a planet and ends up meeting the older Spock. The two of them then meet another character, played by Simon Pegg." Scotty has been exiled after his attempts to experiment with transporter technology resulted in the loss of Admiral Archer's dog. Scotty's expertise will be needed to transport Kirk onto the Enterprise as it moves at warp speed, and this will be done courtesy of information provided by his future self.
