Since this seems to take a lot of hints from future Star Trek's, can we assume that in the Pre-FC time line, that Cochran did the warp flight on his own, and that things went a bit different. And that when Cochran received help from the ENT-E crew, saw thier ship, and got a feel o nsome of thier technology, that the timeline was changed?
For Enterprise (See my Nemesis thread for another theory), my theory is that instead of having what books, ect. established before, we have a more futuristic future, due to the fact that Cochran saw these things.
So, simply. I think ENT should be established as being in an alternate universe.
And that ST XI may take place in this universe, instead of the normal one.

Although the crew never noticed how aweful everything looked in Insurrection. So maybe they're just bad at noticing things

But what is the difference between FC and INS

This alternate universe since FC/ENT is a neat way to explain some things considered as inconsitencies, like Romulan BoPs with cloakign technology (which was just a mistake) or things like FC with Klingons, Borg and Ferengi (which were no real inconsistencies).
So there was some bad writing, some continuity errors, but nor more or less then in any other Trek before. Alternate universe stuff should only be taken if it has dramatic purposes IMO, like the Mirror Universe.

The theory can work because we never see what happens after they return. The theory also has merrit because the Enterprise crew ignored every rule of the Temporal Prime Directive.

So the crew of the 1701E should have just let the Borg succeed at their attempt to destroy what was the KNOWN outcome of "First Contact"?

Yeah, the fact that they already knew First Contact was to happen on that date suggests that they had some role in making it happen in 2063. Since that whole 'temporal wake' thing insulated them from the changes the Borg had made to the timeline (assimilating the Earth), the changes that DID happen would've been caused by the E crew and oh god my head hurts.

But c'mon, if we can believe in a densely-populated few thousand cubic light years of space, and subspace, and everyone time-travelling every third Tuesday (including, for some reason, the TOS crew popping back to the 60s to fly the Enterprise through the atmosphere to mess with jet pilots' minds), it's not hard to reconcile ENT. Do we need to remember the 1701 taking day trips out of the galaxy a couple of times?

So, c'mon with the alternate universe. It's fiction, guys. We should be amazed that they manage to keep it as straight as they do.

I would say EVERY schoolchild from 2130 on would be able to recite the day and time of First Contact.
