Go to your local library, pick a section of music to which you rarely listen, and graba CD at random. I've found some interesting music that way - Tanita Tikaram comes to mind. Just be advised that all Celtic harp music sounds exactly the same.

Saquist is correct in that U2 has fallen off a bit since Joshua Tree or Achtung Baby... but I still love their old stuff!
