If Gandalf could summon and ride eagles, and Sauron had no air power to speak of at the beginning of the trilogy, why didn't he just hop a bird out to Mt. Doom with the ring in his pocket, toss that thing into the volcano, and be back to the Shire in time for afternoon tea?

This question was actually addressed in one of the LOTR DVDs. The reason is because of the Nazgul. Any Eagle that attempted to fly in would have been attacked and killed. I am sure there are ways around this, but that's they reason that was given.

Thats the kind of behaviour by producers that I really hate and that is so typical for Sci-Fi and Fantasy as a genre. You have a plothole? No, no, no, its all explained on the bonus material and in the expanded universe. Just read the comics or books or watch the DVD.

Have you ever heard of a plothole in a thriller where the producers had the guts to explain their mistakes away like this?

According to JRRT 'canon', the Eagles wouldn't carry a ring-bearer. (Which is why they wouldn't pick him up until after...)
