Actually there are about 3 rejected designs, they were in The Art of Star Trek, along with a few rejected "Redesigned" Enterprises, believe it or not they asked Ralph McQuarie (Concept Painter who designed a great deal for Star Wars) to create a few paintings to re-design the enterprise, but it was rejected when Matt Jefferies updated the original ship. The nacelle configurations were a little unrefined.

Here is another Excelsior Concept Model.

They could of use that design for a new class of starship maybe the defiant or the intrepid class USS VOYAGER.

Ralph McQuarie did not do Excelcior protypes. He drew/pained possible Enterprises for the abandoned "Star Trek-Planet of The Titans" idea in the mid-70's.

Do you have the 3rd Excelcior model, it looked like a streched version of what was used.
