There was a gap between ST:V and ST:VI. Remember, they were no longer serving on the Enterprise when ST:VI started. They were brought back together thanks to Spock volunteering them for the mission to help the Klingon's.

So, it is possible they had a 5 year mission between ST:V and ST: VI

Look at how much they 'aged' between STV and STVI. I also think there was a significant gap between those two films. But I also thought that Kirk and co. had another 5 year mission in between TMP and TWOK. TMP takes place 18 months after TOS, but then TWOK comes along and Spock's a captain, Kirk's teaching and worried about growing old.

Yeah, I believe that Kirk had three five year missions in total. Two with the original Enterprise and one with the Enterprise-A.

Also remember, Sulu had been on a 2 year mission with the Excelsior, so there were 2 years AT THE VERY LEAST in the passage of time within the Star Trek universe between V and VI. Plus, I'm sure ships got upgrades all the time. I mean, even the TNG set changed within the filiming of the show.
