That's a good analysis, the first trilogy was basically a romantic adventure story set in space. I recently watched the first "Clash of the Titans" and it's the same as Star Wars except for the setting.
You also pointed out the self-irony of this genre and this can indeed be a great asset.

I come from the opposite direction and didn't like the irony and obscurity of the first trilogy, so I enjoy the second trilogy which delves into things and deals e.g. longer with the difference between the Sith and the Jedi more. Something like the midichlorians is just fanwank (just like the nanoprobes in VOY) but the lethal competition, the death cult, the expectation that your pupil will slaughter you sooner or later and so on, this stuff was important on a dramatic level in my opinion.

Midichlorians almost completely demystified "The Force" (and not in a good way). It turned a very spiritual aspect of Star Wars into a science. Lucas made a veiled attempt at maintaining the spirituality of The Force when Qui-Gon gave his speech to Anakin about what the midichlorians were.

And I'll tell you this....

Watch Episode I and listen to Qui-Gon's midichlorian speech to Anakin, and then watch Rob Roy, and listen to Rob's speech to his two kids about "honor". I swear, it's almost the exact same speech!

Perhaps that was why Anakin was supposed to balance out the force, to bring the Jedi back to a more spiritual place. They interpreted that prophecy as him defeating the Sith to bring balance back to the force, but perhaps wiping out the Jedi was also an extension of that. Qui-Gon's outlook was much more like Yoda's in the original trilogy, I think that is by design.

I don't hate any of the prequels. I enjoy Episode I, aside from Jar Jar. I don't care for Episode II all that much anymore, if only because it's just kinda boring. I love Episode III and it's by far the most watched prequel for me!

The only one that comes close to the level of greatness and nostalgia I feel for the OT is Episode III. No movie in the last decade had me more pumped the entire time.

Episode III is actually my favorite of all six Star Wars movies, just barely (oh so barely) edging out The Empire Strikes Back in my book.

If I have one regret about Ep III.....I just wish they'd've been a bit more creative with James Earl Jones' "NOOOOOOOOOOOO!!!!!!!!!!!!" when Vader laments the death of Padme. (Maybe add a hint of a beastly roar or something to further add to Vader's fury and tragedy.)
