Aside from blue, there also appeared to be olive green and grey Starfleet uniforms aboard the Kelvin, although the ship's medical staff were attired in separate white uniforms that might be just what they wear in sickbay (McCoy did the same thing during the early TOS movies).

Starfleet uniforms constantly change to reflect the current times in the Federation, IMO. In the Prime Universe, it's ironic that the classic TOS uniforms were actually not in service for very long...
