Default The rest, as they say, is history...

This is a topic for each person to have his/her say about what they think happened to the ENTERPRISE crew following the signing of the UFP Treaty.
Here's my take:

Archer was indeed promoted to Admiral, much like his successor (Kirk) however, also like Kirk, he did not have a mere desk job; he commanded a retrofitted version of his first command: the Bonaventure NCC-1000 (a very cool design, which is essentially a TOS-era NX-01) aboard which he served for the remainder of his career.

T'Pol left Starfleet forever following the death of Charles Tucker. She returned to Vulcan, forsook logic in favor of passion, and went into exile out amidst the desert wastes. She happened upon a young vulcan male named Sarek when both were experiencing Pon Farr, and as a result, she later gave birth to Sarek's firstborn son, Sybok, who retained the rebellious passionate attitude of his mother, much to Sarek's chagrine. T'pol met her son's half-brother, Spock, when he was a mere child. Spock, who had been taught by Sarek that Vulcans were supposed to be purely logical, was disturbed and disgusted by T'Pol. It is thought that this experience was what influenced Spock's decision to so totally embrace pure logic.

Lt. Cmdr. Reed remained at his respective post alongside Archer aboard the Bonaventure, until, in 2180, he eventually accepted command of his own ship, the Daedalus-class USS Olympic, which he commanded until his death many years later.

Hoshi remained in Brazil for many years, never returning to Starfleet until, in 2183, while vacationing on Risa, she was reunited with Reed, and they fell in love. They married the following year, and Hoshi returned to Starfleet, accepting a posting aboard the USS Olympic as ship's counselor.

Lt. Mayweather left Starfleet, becoming a civilian manager of Jupiter Station. He maintained that position until 2218, when he had a nervous breakdown of sorts, hijacking a small courier-type ship, and flying it into Jupiter's atmosphere. No wreckage of the craft was ever recovered, and no explanation for Mayweather's erratic behavior was ever provided.

Phlox never returned to Starfleet, although he did speak at a seminar on Vulcan cardiovascular functions held at Starfleet Academy, an event attended by one Leonard H. McCoy, who was an aspiring young physician at the time. It was this speech that convinced McCoy to join Starfleet, not to mention spark a great friendship between himself and the old Denobulan. Indeed, the two were great friends, and spoke often over subspace radio. When Phlox passed away in 2269, it deeply troubled McCoy, who left Starfleet upon hearing the news.

Overall, Archer and his crew became legends who, despite being overshadowed by the generation that followed them, were always held with high regard amongst their peers and successors. The original crew did have reunions on occasion, the last of these being in Spring of 2245, at the launch of the brand-new Constitution-Class USS Enterprise NCC-1701.
Out of the original seven, only three remained; Archer, T'Pol, and Phlox. The following day, Admiral Archer died from natural causes, the last human member of the NX-01 bridge crew. A statue was built and set outside the gates to Archer's home town of Versailles, Kentucky. The following words, taken from his speech at the UFP Treaty Signing in 2161, are inscribed at the statue's base:

"OUR GREAT TREK ACROSS THE STARS HAS ONLY JUST BEGUN"

Some pretty interesting ideas there but with one issue - Syboks mother was a Vulcan Princess - when did T'Pol become royalty?

Hmmm...

Archer-After his promotion to Admiral was instrumental ias a diplomat n what eventually became the UFP. After the formation he followed his father and went into what became known as the Federation Class ships, incorperating all the combined technologies of the member worlds of the new UFP. The second vessel of this class was named the USS Archer (NCC-12) with it's full crew of 111. These ships started 3 year missions of exploration and first contact to expand the borders of the Federation.

T'Pol returned to Vulcan where she taught interspecies relations. T'Pol eventually was nominated to be the first Ambassador to the Federation from Vulcan. Near the end of her career as a diplomat she taught all she had learned to an aspiring young page named Sarek.

Reed after many years of service aboard various Starfleet vessels, was instrumental in the disolving of the MACOS and reforming them, and their skills, into what became known Starfleet security after the UFP formation.

Hoshi after her tenure on the ENT, went into linguistics for the young UFP, and helped form what became known as Starfleet Communications.

Lt. Mayweather was tragically lost during an early test of an experimental warp powered shuttle he helped design. the ship powered up, and then disappeared....

Phlox was asked along with other Vulcan, and Earth ship medical officers, to help form what became known as Starfleet medical after the UFP formation.

Archer get promoted to admiral then later the federation first president.

T'pol return to vulcan and become head of the vulcan science academy,then accepted a seat on the federation council.

Reed stays in starfleet and help designs the defensive weapons to be use on board federation ships starbases etc,retires from service after 30 odd years.

Mayweather stays in starfleet and quickly rises through the ranks until he makes captain and command one of the new daedalus--the USS Horizon,first of this class to be named horizon,he later meet up with Gannet

Captain Jonathan Archer is promoted to Starfleet admiral; T'Pol is promoted to captain but accepts a teaching position at the newly formed Starfleet Academy; Doctor Phlox joins the senior staff at Starfleet Medical.

Federation Starship USS Yorktown, NCC-101, is launched under the command of Captain Robert Winter. Lieutenant Commander Malcom Reed is assigned as first officer, Lieutenant Travis Mayweather joins as chief weapons officer, and Lieutenant Hoshi Sato as chief communications officer.

It's actually a fan-made ship--a Paris-class starship designed by Masao Okazaki (3D render by Emil Petrinic).

Masao's designs for early 23rd-Century starships were tapped by Pocket Books for their new line of Star Trek: Vanguard novels...

I did see that design! Read those books. Not bad...not my fav ship, but well done never the less.
