The thing is, the Vulcans
weren't really helping Humans. That was one the gripes Jonathan Archer initially had with them. The Vulcans already presumably had starships that were capable of Warp 5 (if not Warp 7) when they first encountered Humans and didn't share any of that advanced warp technology. Henry Archer spent most of his life working on the Warp 5 engine and never got to see it fly because the Vulcans refused to help.
It wasn't so much to protect Humans from themselves, IMO, but to prevent them from going stupidly forward and starting an interstellar incident with someone that could disrupt galactic peace...
