Question: where is a Romulan heart located? I read on a Star Trek site that a Romulan heart is located where a human liver is located. So, if Sulu stabbed the Romulan in the chest, that means it wouldn't have killed the Romulan had he not fallen off the drill.

Why not make a test? Put on your boots, then you are a Rommie, find a sharp kitchen knife and an unscrupulous assistant, get stabbed in the chest and then report your results. In case you survived.

But according to the Starfleet Medical Reference Manual, the aorta curves superior and continues along the midline between the lungs.

Romulan anatomy never made sense to me, if they came from Vulcan then they should be Vulcans but with a different society, not a different race. That's why in the new movie I was glad that they didn't have the ridges, which never made any sense to me.

although in the movie they did have slightly alien eyes, while the Vulcans had normal "human" type eyes.

Well, instead of ridges which were just a cosmetic thing we now have tattoos which are not just superficial but make the Romulans stereotypical villains. You could have missed half the film, be totally wasted and still get instantly that the folks with the bald heads and tattoos are the bad guys.
Now compare this to the very first appearance of the Romulans which did not villify them and was rather about potential confusions between ally and enemy. They look like Vulcans so whom can we trust?

I'm not sure how closely all the writers thought about those aspects. But yeah, no clue about ridges and what that was about.
