That bike may be from the mid-21st century for all we know. It is established canon that Kirk is fond of antiques (ST II).
(EDIT) For that matter, it's also canon that Kirk is an adventure/danger junkie in his personal life. We see him free-climbing a mountain in STV, and in Generations he talks about jumping a gully on horseback because he enjoyed the sensation of fear.
