I want to see Doctor McCoy wearing that short-sleeved medical uniform he frequently did in TOS. I dunno why, I just think it's cool.

In all seriousness, I want to see the aftermath of the destruction of Vulcan on the Vulcan people. Lots of interesting stuff to explore there
