Cross actually talks about doing blue screen work on what he refers to as a "jet motorcycle" or hoverbike in the Star Trek Magazine, so evidently it was built and filmed .

Yeah. That was pretty awesome! But did you notice that his bike sounded like there was something horribly wrong with the drive system? It sounded broken. There was nothing cool at all about the way that thing sounded. It definitely had a Star Warsy oscillating sound that could have come straight out of the SW prequels. As did every other ship or vehicle in the whole movie.

Did not notice the thing with the wheels on Kirks bike at all! Too busy checking out the E, and being disappointed. Seems like they paid attention to little things and missed the mark on the major ones.
